To guarantee the quality of fresh meat, both the European Union and Spain have drawn up wide-ranging legislation addressing all kinds of issues to ensure that animals are in a good condition before entering the food chain. This is why regulations are in place for issues relating to diseases and diet, both of which have raised concerns among consumers following several cases. Regulations also protect animals, to ensure that any suffering is prevented during their lifespan and at the time of slaughter. Labelling standards have also been established to trace the route taken by the animal at all times throughout the process, together with hygiene protocols for meat handling.

Regulations to control animal diet have been aimed at monitoring approved ingredients of feed given to animals to fatten them up, and restrictions have been placed on the use of hormones for inducing artificial and accelerated growth of livestock destined for human consumption. These restrictions even establish undesirable raw materials for animal feed, as set out in European and Spanish regulations.
