Santi Santamaría chose one of his closest collaborators, Óscar Velasco, to take charge of the kitchen at Santceloni, a restaurant located in the Hesperia hotel in Madrid. The name of the restaurant corresponds to the town where El Racó de Can Fabes, the restaurant run by Santi Santamaría, is located. Its cheese trolley is highly appreciated by the city’s critics, as is its Santceloni shank of milk-fed veal with potato purée. A reserved, elegant restaurant, with plenty of space between tables and one of the best floor services in the city
