The Portal de Descalzos, which takes its name from the street on which it is located in the center of Pamplona, is another example of the haute cuisine boom in this city in the Navarre region. Its owner and chef is José Uranga, a chef who is also a farmer committed to organic farming methods. His dishes use organically farmed ingredients and other produce protected by the Slow Food philosophy. Urnaga is a believer in the work that restaurateurs can do to promote and recover native produce and livestock breeds. The specialized press and critics consider him part of the "eco-chef" movement in Spain. The restaurant’s menu normally gives the names of its trusted suppliers and only seasonal produce is used.
