Sagartoki is one of the spearheads of gastronomy in Alava province. It has a famous bar of pinchos (snacks) and creative tapas, and a sidrería (cider bar) which brings together traditional and innovative concepts. Beef cutlets, highly valued Ibérico pork products and some kinds of fish, not normally found in carveries, are its specialties. Senén González is the kitchen manager.
