The current restaurant started as a wine cellar/bar created by Juanmari Arzak’s grandparents. His mother converted it into an eatery with a certain prestige and then Juanmari made the final transformation. One of his daughters, Elena, is currently working side by side with Arzak, leading the research branch of the restaurant, along with Xavi Gutierrez and Igor Zalakain.
