A family-run establishment, which was first in the hands of Mario Sandoval’s grandfather, Coque, and later run by his mother, Teresa. It wine cellar is one of the most highly praised in Spain, with one of the first electronic wine lists. Sandoval is a staunch defender of the influence of traditional Castilian and Madrid cooking on avant garde cuisine. Mario selects his raw materials with the greatest of care, many of them coming from the vegetable gardens and livestock farms of the region of Madrid, and with which he works with a modern vision.
