It shares a building with the traditional family restaurant (Echaurren) and the hotel. The same kitchen is used for the gastronomic creations of Echaurren (traditional) and the more contemporary cuisine of El Portal (modern). Paniego’s success lies in his avant-garde reinterpretation of the traditional cuisine of La Rioja, as well as his being the first restaurant in the region to gain a Michelin star. His study of aromatized olive oils and the use the aromas of smoke from vine wood are a few of the technical contributions made by this chef from La Rioja, who is also advisor to the restaurant of the Marqués de Riscal winery in Elciego (in the Rioja Alavesa wine district).
