Tickets is a project which arose from the limitless imagination of Albert Adrià, and here he is accompanied by his brother Ferran and the proprietors of the restaurant Rías Baixas in Barcelona. This is a tapas and cocktail bar with particular emphasis on quality, in conjunction with culinary games, subtle allusions to avant-garde techniques, and a homage to traditional cuisine. All together and perfectly combined. Examples of tapas include tomato tartare, tiny fried fish in the Andalusian style with algae from Galicia, salad of orange juice and olive juice, grilled tuna belly, Galician empanada pastry filled with baby sardines… The cured Ibérico pork products are from Joselito, and the desserts from the patisserie of Christian Escribá. These are just two examples of the rigorous quality requirements the company demands from all its suppliers.
