Type: Spanish Cuisine
This is the fourth Jaleo restaurant by superstar chef José Andrés, with the other three located in and around Washington, DC. The cuisine is similar at all locations: high quality, modern interpretations of traditional Spanish food. You’ll find terrific tapas here, including almejas con limón (clams with lemon) served in a little can and tiny cones of La Serena cheese with membrillo (quince paste). You’ll also find a selection of paellas, cooked in a unique wood-fired grill that dominates the dining room. This being Las Vegas, the bar is a lively spot for a glass of Jaleo’s own sangría or modern interpretations of classic cocktails. The sprawling space was inspired by Spanish foods and crafts, and it includes handmade embroidery resembling a mantilla and doors inscribed with the names of popular tapas. The wine list is extensive, with an excellent selection of Spanish wine from various regions as well as American, European and South American vintages and a number of Sherries.
