Paco Roncero

Type: Avant-Garde Cuisine


Paco Roncero, the Michelin-star mastermind behind La Terraza del Casino and Estado Puro in Madrid and arguably one of Spain’s most influential chefs, opened VIEW62 in Hong Kong in June 2012. It is the city’s only revolving restaurant, offering “unrivalled” views from The Peak to Victoria Harbour, and is located in the Hopewell Centre.

There are two tasting menus available, 14 courses and 16 courses. Both consist of four stages: snacks, tapas, entrees and dessert. There are also set dinner and lunch menus and afternoon tea menus as well as several prix fixe options. The dishes are a selection of his star recipes mixed with new, innovative ones. These include the XXI Century Omelet, which features a slow-cooked onion with a middle layer of egg yolk, potato foam and extra virgin olive oil; sea bass with green bean sauce and Ibérico ham air, which comes with sautéed green beans and anchovies; Lobster with olive oil soup and grapefruit; Beef shank with potato puree and black olive oil; and Orange sorbet with Arbequina olive oil, passion fruit and Pedro Ximénez. Roncero is expected to continue to “put his avant-garde twist on cuisine.”

VIEW62 will also serve innovative signature cocktails. Ladies’ Choice, for example, consists of flavored liqueur pearls to be are eaten with champagne, creating a “popping, flavorsome experience with every sip”. Another option is Fruit-ini, which comes with a liqueur-flavored string. The food is served against an equally fabulous backdrop. VIEW62 is organized in three areas: a bar lounge, with a DJ booth and a marble and mother of pearl bar; the main dining area, with a cloud-inspired ceiling comprising 50,000 hanging wooden sticks; and a semi-private dining area. Roncero’s latest venture is sure to “make its mark on the global culinary landscape as it merges the latest culinary technology, outstanding creativity, and unforgettable textures and flavors.”
