Palace Fesol restaurant was founded in Valencia in 1909, and during its 100-year history, it has become a mecca for eating rice. Now, after more than a century in business and with four generations of the family having held the reins, it is publishing a book in honor of its anniversary with a view to sharing its extensive knowledge on this culinary segment. The text showcases over 100 recipes (accompanied by excellent photos) that the restaurant has been preparing since it opened its doors.
In addition to recipes, the book offers practical information on the history and the world of rice, as well as the story behind the restaurant, general advice on how to make paella, different types of rice and how to prepare them, how to make the stocks, and much more.
Rice with prawns and baby garlic, Baked rice with eel and green beans, Vegetable fideuà (thin noodles), Winter paella, Rice with hare, and Soupy rice with chard are just some of the delicious suggestions.
