Try a sweet Malvasía from the island of La Palma, with a prodigious balance between sweetness and acidity.
200 gr rice
200 gr sugar
100 gr butter
300 ml milk
1 lemon rind
1 cinnamon stick
1 tbsp powdered cinnamon
7 oz rice
7 oz sugar
3.5 oz butter
10.625 fl. oz milk
1 lemon rind
1 cinnamon stick
1 tbsp powdered cinnamon
0.875 cup rice
0.875 cup sugar
0.375 cup butter
1.25 cup milk
1 lemon rind
1 cinnamon stick
1 tbsp powdered cinnamon
Cook the rice in a wide pan with double the amount of water. Meanwhile, in another pan, bring the milk to the boil with the sugar, lemon rind and cinnamon stick. When the rice is almost dry, slowly pour in the milk, stirring all the time. Half way through, add the butter and stir. Continue to cook over a very low heat until the mixture becomes creamy and thick. Remove the lemon rind and cinnamon stick. Serve in individual bowls and sprinkle with powdered cinnamon.
