Summer fruit salad with mint and olive oil

This frugal salad, with mint enhancing its aroma, calls for a daring match. For example, semi-sweet white wine made from the Malvasía variety, like DO Ycoden-Daute-Isora (Tenerife), well sustained by its marked acidity.

Ingredients
Metric System Units

250 gr strawberries
2 firm but ripe kiwis
2 ripe peaches
15 gr chopped fresh mint
30 ml Spanish extra virgin olive oil
1 lime (optional)

Imperial UK Units

8.875 oz strawberries
2 firm but ripe kiwis
2 ripe peaches
0.5 oz chopped fresh mint
1 fl. oz Spanish extra virgin olive oil
1 lime (optional)

US Units

1.125 cup strawberries
2 firm but ripe kiwis
2 ripe peaches
15 gr chopped fresh mint
0.125 cup Spanish extra virgin olive oil
1 lime (optional)

     
     
     
Preparation

Wash the strawberries and cut them into quarters. Place them in a bowl. Peel the kiwis and the peaches and dice the flesh into small pieces. Add them to the strawberries. Chop the mint leaves and sprinkle them over the fruit salad. Pour on the extra virgin olive oil and stir gently. Finally, serve the fruit salad in bowls.

Garnish with some grated lime rind.
